Rice pudding with chili pineapple and ice cream

Ingredients:

Green tea or lemon/lime flavored ice cream

Rice pudding

Chili roasted pineapple

Rice pudding, made with:

1 cup cooked white rice

2 cups cream

1/4 cup sugar

1 tbsp orange zest

1 tsp of vanilla extract

Chili roasted pineapple, made with:

1/4 cup sugar

1 pineapple, peeled, cored, and cut into slices

2 tbsp butter

1 tsp chili powder

Method:

For the chili roasted pineapple, melt the sugar in a saute pan with a little water and caramelize. Add the pineapple slices and cook for approximately three minutes. Add the butter and the chili powder and cook for two more minutes. Set aside.

Heat the cream until it boils, add the cooked rice, sugar, vanilla extract and orange zest.

Stir the rice mixture until thick and creamy. Cook for approximately 15 minutes.

Ladle the hot rice pudding into a bowl, top with the green tea flavor or lemon flavored ice cream.

Add the chili pineapple slices and serve.
