The delicate food of Shaanxi Province was briefly showcased in the second episode of the TV series "A Bite of China," which has served up a panoramic introduction to various selections of gourmet food and the country's rich culinary traditions to audiences all over China.

 

But the delicious Shaanxi food is not only limited to what has been showcased on TV. So, let's take a look at what has been left behind.  

 

                           Snacks in Shaanxi

  

 
yangroupaomo Guests are given a big bowl and pieces of unleavened bread. They are told to break the bread into small pieces to fully absorb the flavor of the soup. After having prepared the bread, guests pass the bowl to the chef boils the bread into a pot of steaming mutton soup. A small quantity of beef or mutton is placed on top of the bowl. While eating, you can add some pepper sauce and sweetened garlic to make the flavor less greasy.

Chinese hamburger (Rou Jia Mo) 肉夹馍

Like the name suggests, Chinese hamburger (Rou Jia Mo) is a typical Shaanxi-style meaty snack which can be held easily with your hands. Literally it is translated as "meat pinched between mo (or bread)." The bread is chewy and the meat (beef or pork) inside tastes soft, tender and has a fragrant smell.

Qishan Noodles

Qishan county in Baoji city is the birthplace of the Western Zhou Dynasty (1046-771BC). Qishan Noodles enjoys the same long history. The noodles are hand-made with wheat flour. The ingredients mainly include shredded pork, grassleaf, dry-lily, egg, bean curd and carrot. The noodles taste sour and hot.

Gourd-shaped Roasted Chicken 葫芦鸡

A hen weighing one kilogram is normally used to prepare this dish. The chicken is tied in a gourd-shape, hence the name. After it is boiled, steamed and fried, the chicken tastes fresh, tender and crispy.
